Japanese green tea has a very long shelf life under good storage conditions. The packaging indicates a best-before date in the form year/month/day. 200915 means that the best quality tea can be kept until at least 15 September 2020. This does not mean that the tea can no longer be consumed after this date. Under good storage conditions (cool, dry and dark) the tea can be kept well beyond this date without loss of quality.
In Japan, it is assumed that the tea is still available in the best quality for a good two years after harvesting when properly stored. The fresh harvest is only opened at the end of the harvest year anyway, as the fresh tea contains too much teaine. It will certainly last until the end of next year. With modern storage in climatic chambers and sealed packaging, the tea can easily be stored for several years.
It is best to store the infused tea in a cool, dry place in closed containers and not in the refrigerator. It is good to store the opened packs in a glass or tin container, tea easily absorbs foreign smells. That's why in Japan you put outdated tea in your wardrobe. There it eliminates all bad smells.
Durability of Matcha
atcha is a finely powdered green tea. The tea is ground automatically in air-conditioned chambers without lighting by slowly running stone mills. It has a large surface and absorbs oxygen more easily from the air. This is why the factory only grinds as much Matcha as can be packed and shipped on the same day.
As long as the vacuum can is closed and stored in a cool place, the tea will not be damaged far beyond the freshness date. After opening, it should not be consumed for too long.
Koyamaen cans have an airtight lid. They are the ideal container for storage. Larger storage cans can be stored in the refrigerator. However, the cold tea easily absorbs the humidity when opened and tends to form lumps. This does not reduce the quality of the tea in any way. To avoid lumps in the finished tea, it makes sense to pass the tea through a sieve.
Koyamaen also offers tea strainers in airtight tins. You can always store the required amount of tea for one or two days and outside the fridge. Smaller quantities can be stored in a cool, dry place outside the fridge. This also avoids any transfer of sausages through intensively smelling food.
